Utopljenici is a sweet pastry, especially associated with the island of Korčula and the nearby town of Blato. The name refers to the way the dough is inflated and “floats” when risen in water before baking, a method used in local home kitchens for generations. The dessert is known throughout Dalmatian communities for its crisp surface and tender interior. The first step in preparation is making a yeasted dough with flour, warm milk, fresh yeast, eggs, oil or butter, a bit of sugar, and aromatic additions like orange or lemon zest and a splash of rum or pear brandy; after kneading to a smooth consistency, the dough is placed in a cloth or tied in a knot and submerged in a bowl of water until it rises to the surface, indicating that the yeast has activated and the dough is fully aerated. Once risen, the dough is removed from the water, portions are torn off and formed into small rolls or twists, which are then rolled in a mixture of coarse sugar and coarsely ground nuts such as walnuts or almonds, placed on a baking sheet, and baked until the sugar begins to caramelize and the dough is a light golden color. Utopljenici will differ in shape—some regions form knots, others make small crescents or twists—and in the choice of nuts or the inclusion of additional flavorings; some cooks emphasize citrus zest, others add a touch of spice, and the balance of sugar and nut coating can differ from household to household. Utopljenici is eaten at room temperature or warm at home and during family gatherings on Korčula and in Dalmatia, often served with black coffee or tea and commonly paired with Dalmatian dessert wine such as prošek, which complements the citrus and sugar notes while balancing the nutty coating.
