Tourte des Pyrénées is a rich sponge cake originally from the Pyrenees. It is a round cake with a pronounced, slightly domed top and evenly fluted or scalloped sides. Villagers served this cake at family gatherings, weddings, and baptisms, and it became one of the sweet staples of the valleys where dairy-farm butter, eggs, and home-ground flour were readily available. The method of preparation involves creaming softened butter with sugar and flavourings such as vanilla and rum, then adding egg yolks, flour and baking powder, folding in stiffly beaten egg whites to lighten the batter, pouring the mixture into a buttered mould and baking. Some versions include fresh or wild blueberries or other seasonal fruits folded in just before baking, and once cooled, the cake is often dusted with icing sugar. Among the variants, one finds the plain cake, the cake enriched with blueberries (“myrtilles”), the cake perfumed with orange zest or enhanced with extra rum or vanilla extract, and occasionally a version made with demi-salt butter to deepen the flavour. A distinctive feature of the tourte des Pyrénées is how it holds its shape and remains moist yet aerated thanks to the beaten egg whites, which gives it a light sponge-cake character despite its simple country-style ingredients. It is eaten at breakfast, as a snack or dessert, served either warm or at room temperature, often accompanied by a cup of coffee or a glass of white wine from the region, and it travels well, so it is also brought along for picnics or given as a gift when visiting.
