Tartouillat is a baked fruit dessert from the Bourgogne region. It consists of a thick batter made from flour, water or milk or cream, sugar, eggs, and a pinch of salt generously studded with pieces of fruit such as apples, green apples, or cherries, creating a soft, cake-like body where the fruit remains the dominant component and the batter lightly sets around it. It developed as a rural preparation in the countryside where fruit from orchards was combined with simple ingredients and baked on buttered paper, vinegar leaves, or cabbage leaves in village ovens, and it was documented in regional press from the late 1880s through the early twentieth century with local names and variants in areas such as the Clunisois, the Bazois, and Bresse. To prepare tartouillat, flour is mixed with sugar and salt in a bowl, a well is made in the center where eggs are cracked and whisked in, and then milk or cream is added gradually to form a smooth, relatively thick batter; fruit such as pitted cherries or peeled, sliced apples is spread on a buttered sheet or in a shallow pan, the batter is poured over to cover the fruit evenly, and the dish is baked in a hot oven until the batter cooks through and the fruit is tender, with small adjustments in fruit amount or batter thickness depending on household practice. Variations include the use of different fruits like pears or plums in place of cherries or apples, the occasional addition of a splash of brandy in the batter for aroma, or serving with a dusting of powdered sugar, while what distinguishes tartouillat is that the fruit pieces are abundant and remain the focus set in the heavier batter. Tartouillat is eaten warm or at room temperature as a dessert or sweet course after meals, typically served directly from the baking vessel with a spoon or in slices, and it pairs well with black coffee, mild black or herbal teas, or light sweet wines that complement its pronounced fruit presence without overshadowing it.
