Tarte conversation is a French puff pastry tart from Paris and the surrounding île-de-France region, first created in the late 18th century and made as a specialty dessert for refined gatherings following the publication of Les Conversations d’Émilie by Louise d’Épinay in 1774. Tarte conversation consists of a low, round tart with a base and top of layered puff pastry enclosing a smooth frangipane cream made from ground almonds, butter, sugar, eggs and cream, and the surface is finished with a thin layer of firm royal icing made from egg white, powdered sugar and a touch of flour, often decorated with fine strips of pastry in a diamond pattern on top, yielding a crisp outside, rich almond center and a slightly firm sweet glaze. The dish emerged in Parisian pâtisserie culture in the late 1700s when almond-cream filled pastries gained favor among urban gourmets, and its name reflects the social context in which elegant pastries were served to accompany conversation and tea rather than formal meals.
