Unlike the widely recognized, open-faced Karelian pasties baked in an oven, this rustic specialty is intentionally sealed in a closed pocket. The dough is a straightforward, unleavened blend centered on dark rye flour, providing a distinctly earthy, robust foundation. Tucked inside this firm shell is a modest, comforting filling consisting of loose, pre-cooked rice or hearty barley grains. The pastry’s charming moniker, which translates directly to "bridegroom's pie," stems from an old rural tradition about unexpected suitors visiting a family homestead. According to local lore, if the household matriarch began baking sweet yeast buns (pulla) upon his arrival, the hopeful bachelor knew his proposal was doomed; conversely, if she swiftly assembled these savory pastries, it signaled her blessing. Because of this demand for rapid preparation, the pockets are uniquely pan-fried in sizzling butter rather than baked, producing a wonderfully crisp, golden, and blistered exterior.
