Sougania are stuffed onion rolls containing minced meat, rice, and herbs. The dish traces its linguistic and culinary roots to the Ottoman Turkish word soğan, meaning onion, reflecting centuries of cross-cultural culinary synthesis across the Aegean trade routes prior to the 1923 population exchange. Preparation requires parboiling large yellow onions whole, slicing them longitudinally to extract the individual concentric layers, filling each layer with a mixture of ground beef or lamb, short-grain rice, finely chopped onion centers, parsley, mint, cumin, olive oil, and tomato paste, rolling them into tight cylinders, and simmering them in a shallow pot with stock until tender before finishing with an avgolemono (egg-lemon) emulsion. Sougania are eaten in homes, local tavernas, and holiday feasts across Lesbos and the northeastern Aegean islands, served hot as a main course or warm as part of a meze spread alongside crusty sourdough bread, fresh feta cheese, and tomato salad, paired with dry anise-flavored ouzo from Mytilene, chilled Assyrtiko white wine, light retsina, or sparkling water.
