  • 8 sticks (for toasting the marshmallows)
  • 16 graham crackers
  • 8 bars plain chocolate, broken in two
  • 16 marshmallows

    Poke two marshmallows onto each stick and toast them over coals.

  2. 02

    When they become gooey and crispy, take them off the sticks. Assemble each s’more in the following order: graham cracker – chocolate – 2 marshmallows – chocolate – graham cracker.

    The s’mores are ready when the chocolate melts slightly.

Homemade Indoor S’Mores

This upgraded version of s'mores is made with a graham cracker crust, homemade marshmallows, and dark chocolate. Unlike the original campfire s'mores, this recipe for at-home preparation requires a little bit more time but results in a mouth-watering dessert that will taste like you've prepared it by the campfire.

MARSHMALLOWS

Before being roasted, the marshmallows need to be poked on the roasting sticks. Each roasting stick should be as long as an adult’s arm and can be made out of metal or hardwood. Keep in mind that the marshmallows cook faster on metal than they do on wood. If you use metal sticks, choose the ones with a wooden handle since they tend to become very hot, or protect your hands with a damp piece of cloth as a makeshift handle. Several marshmallows can be roasted on the same stick, although the best results are achieved when you roast only one at a time.

ROASTING OVER HOT COALS

Place the stick holding a marshmallow over glowing coals and rotate slowly, so the surface turns light brown. Rotating is important to prevent the marshmallows from melting and falling off the stick.

ROASTING OVER OPEN FLAME

If you stick the marshmallow in the fire directly, it will burn immediately. Keep your marshmallows above the flame, over the stream of hot air. This process is shorter than roasting over hot coals, so keep your eyes wide open. If the marshmallows still catch fire, do not shake the stick, because a very hot molten marshmallow can easily slide right off the stick and cause a painful burn.

ROASTING UNDER THE BROILER

If you make marshmallows at home, turn your oven on to a broiler setting and arrange the marshmallows in a single layer on a shallow baking pan covered with parchment paper. Roast shortly on an upper rack, and turn over using a spatula, so they brown evenly.

GRAHAM CRACKERS

Invented in New Jersey in 1829 by the Presbyterian minister Sylvester Graham, graham crackers were originally envisioned as a health food. Their crunchiness makes a perfect pairing for the creaminess of the chocolate and the chewiness of the marshmallows. Often, the graham cracker is in the form of a rectangle consisting of two smaller crackers, with a scoring across the middle. Break them apart to get two square crackers which will make the top and the bottom layer.

CHOCOLATE

Both milk and dark chocolate can be used for s’mores. Simply break the chocolate bar into an adequate size and place it under the hot marshmallow or on top of it — or do both! Alternatively, s’mores are sometimes prepared with chocolate spreads such as Nutella.
