Sacristain is a laminated pastry from southern France, especially associated with the Occitanie area around Toulouse and Montpellier, known as a bakery item made from rolled and twisted dough baked until crisp. The pastry is shaped as a long, thin spiral or stick with a rough, crackled surface, offering a dry and flaky bite, a pronounced buttery feel, and a sweet, nutty taste created from puff pastry layered with butter, sugar, and crushed almonds that caramelize during baking. Its name is linked to church life in southern France, where these pastries were prepared near religious buildings and sold or shared during local gatherings, gradually becoming a familiar feature in regional bakeries as laminated dough techniques spread in the nineteenth century.
