Ruifard de Valbonnais is an apple-filled tourte associated with the commune of Valbonnais. Historically, households of the valley of the Bonne used local red apples and available pantry staples to craft a sweet pastry that could be baked in domestic ovens or communal hearths during harvest seasons. The preparation involves slicing local red apples and sautéing them in butter and sugar, then deglazing with a splash of green chartreuse liqueur, while a dough made from flour, eggs, cream, butter and a leavening agent (often baker’s yeast) is prepared and divided into two sheets; the first sheet is laid in a greased tart-tin, the sautéed apples are evenly arranged on top, the second sheet covers the apples and the edges are sealed, the surface is brushed with egg-yolk glaze and the tourte is baked until golden brown. Common variations include the addition of quince alongside the apples, or reducing the quantity of chartreuse for a milder flavor, and what sets this version apart is the use of red apples specific to the Valbonnais area and the inclusion of chartreuse which reflects local liqueur traditions. Ruifard de Valbonnais is served either warm or at room temperature in local homes and cafés, typically as a dessert or for afternoon refreshment, and it pairs well with a light herbal infuse or a fruity dessert wine from the Alpine region.
