Pudim mineiro is a sweet custard from Brazil made with queijo minas, eggs, milk, sugar, and often condensed milk, prepared and served throughout Minas Gerais. Its development follows the long history of Minas Gerais sweets shaped by the abundance of local cheese production and the influence of Portuguese milk-and-egg desserts brought during the colonial period. As dairying grew throughout the inland farms of Minas, cooks adapted the European custard style to include queijo minas, a cheese that defined the region’s culinary identity, creating a denser, more flavorful pudding distinct from coastal and northeastern versions of caramel flan. The usual preparation begins by making a caramel directly in the mold, melting sugar until it turns amber and coats the entire surface. The custard base is mixed by blending eggs, milk, sugar, condensed milk or evaporated milk depending on the recipe, and grated queijo minas. The mixture is poured into the caramel-lined mold and cooked slowly in a bain-marie until set, then cooled completely so the caramel loosens and forms a glossy sauce when unmolded. Variations include versions enriched with coconut, versions made lighter by omitting flour, versions that have no cheese, and occasional adaptations using queijo minas padrão when fresh queijo minas is not available. The pudding’s defining feature is the mild salinity of the cheese balancing the sweetness of the caramel and condensed milk; this characteristic sets it apart from other Brazilian flans. A separate preparation known as pudim de pão mineiro exists as well, but it is a different dessert built around stale bread and does not represent the core formulation of pudim mineiro. Pudim mineiro is eaten chilled, usually sliced thickly, and is common at family gatherings, Sunday lunches, and festa junina tables. It pairs naturally with strong Brazilian coffee, which offsets its richness, and with dessert wines or liqueurs served in small amounts after a meal.
