Poule au pot is a French chicken stew, prepared by slow-cooking a hen with a medley of vegetables in a flavored broth. The dish became widely known during the reign of Henry IV, who famously declared that he would ensure “a chicken in every pot” for his subjects, embedding the recipe in national culinary memory. A large, mature hen is used to make this dish. It is placed in a deep pot and covered with cold water or stock, then simmered gently along with whole onions studded with cloves, leeks, carrots, turnips, garlic, bay leaves, and thyme. Once the hen is tender, the meat is removed, and the vegetables are served first with a portion of the broth. The chicken is then carved and returned to the pot or served on its own, accompanied by the vegetables and ladled broth. Some versions include rice, cream-ruffled potatoes, or additional vegetables such as parsley root or celery, and the broth may be clarified before serving. Poule au pot is typically eaten hot, served in two courses (broth with vegetables, then meat with more broth), and pairs well with light red or dry white wines from western France, such as Bordeaux blanc or a light Beaujolais, which complement the gentle, comforting flavors without overwhelming them.
