Pommé breton is a sweet pastry with an apple filling from Brittany. In the 1800s, households and local bakeries in this heavy apple-producing zone developed the item to quickly consume large quantities of fresh orchard yields. Because refined sweeteners were costly, bakers capitalized on the natural sugars found in local apples, encasing the cooked fruit in a straightforward dough built from regional wheat and butter. The item is made by simmering diced apples in salted butter until they reduce into a dense fruit paste. This filling is then placed inside a rich pastry dough, which is folded into a rectangular pocket or formed into a circular pie with a woven top crust. The exterior is coated with beaten egg to create a dark, shiny finish when baked in the oven. The crust prominently features the region's signature sea-salted butter, which provides a sharp, savory counterpoint to the sweet apple center that sets it apart from standard national pastries.
