Pollo asado is an authentic Mexican dish consisting of marinated grilled chicken that is usually seasoned with citrus juices and cumin. When the chicken is grilled, it is served in pieces and traditionally accompanied by warm, fresh tortillas and pico de gallo on the side. For best results, it is recommended to use achiote powder, giving the chicken its beautiful, golden color.
