Produced in the commune of Sântimbru, in Alba County, pită de Sântimbru is a large, rustic wheat loaf known for its distinctive hearth-baking method, with a recipe dating back over three hundred years. The dough is made by combining wheat flour, a natural sourdough starter, warm water, standard baker's yeast, and salt. It contains no chemical preservatives, relying instead on extended manual kneading and shaping procedures that give each individual loaf a distinctly irregular, non-uniform appearance. Once shaped, the loaves are placed on flat-iron trays coated with vegetable oil. The baking takes place in a wood-fired masonry oven built from handmade clay bricks, known locally as "cărămidă de țigan." Because of the intense thermal environment and the specific dough hydration, the resulting bread maintains its freshness and structural integrity for three to four days after leaving the oven. Pită de Sântimbru is one of the first baked goods in the country to receive formal certification as a recognized local product. The bread can be purchased from the source bakery or at specialized food markets, and is paired with regional cold cuts, cheese, raw vegetables, and robust stews.
