Its development is linked to the long-standing reliance on cassava as a primary crop in the equatorial forest zone, where climatic conditions favor its cultivation and where processing techniques were refined to render the root safe, durable, and suitable for regular consumption, with these methods remaining central even as other ingredients entered the local food system. Preparation involves peeling and soaking cassava roots, grating or pounding them into a pulp, fermenting and pressing the mass to remove liquid, then shaping it into flat or compact forms that are cooked over heat by baking, roasting, or pan-cooking until firm, resulting in a dense structure with a mildly sour profile and no use of yeast or added fats.
