Nussecken is a triangular cake from Germany with a shortcrust base spread with jam or meringue, a roasted mixture of nuts and sugar, and chocolate on the corners. The cake emerged in German homes and bakeries in the twentieth century as ingredients such as jams, nuts, and chocolate became widely available, and bakers developed sheet cakes that could be easily portioned, stored, and served in cafés and homes. Preparation involves pressing a shortcrust dough made from flour, sugar, butter, and eggs into a baking pan, spreading it with a layer of jam or meringue, covering it with a hot mixture of roasted chopped nuts, sugar, and melted butter so it adheres and toasts during baking. The cake is baked until the topping is set, cooled, cut into triangles, and the two outer corners of each piece are dipped into melted chocolate so they hold the nut layer firmly. Common variations include using walnuts or almonds in the topping instead of, or in addition to, hazelnuts, choosing different fruit jams, such as blackcurrant or plum, and adjusting the thickness of the jam layer or the chocolate finish. The cake is eaten at room temperature and is served in homes, at coffee breaks, in pâtisseries, and at gatherings, most often paired with coffee or tea.
