Mostaccioli sardi are soft, spiced biscuits originating from the island of Sardinia, characterized by their diamond shape, a dense, brown interior crumb, and a thin, opaque white sugar glaze on the upper surface. The item appeared in its current form following the widespread cultivation of wheat and the introduction of exotic spices through Mediterranean trade routes during the Spanish administration of the island. While the name is shared with various Italian biscuits, the Sardinian version evolved specifically within the Campidano region, moving from an elite confectionery item to a staple of public festivals and religious celebrations by the 19th century. Preparation begins with a long fermentation process, where a dough composed of flour, sugar, and a leavening agent is mixed with a complex spice profile including cinnamon, cloves, and occasionally anise. A unique technical requirement of mostaccioli sardi is the resting period of the raw dough, which can last from several days to several weeks; this allows the spices to permeate the flour and the natural fermentation to develop a specific acidity and texture. After the resting phase, the dough is rolled out, cut into diamonds, and baked until firm but not brittle. Once cooled, the biscuits undergo a glazing process known as naspro, where a warm sugar syrup is brushed over the top to create a smooth, porcelain-like finish as it crystallizes. They are primarily eaten during the Sartiglia festival in Oristano and at local fairs throughout the year, served at room temperature and is most frequently paired with Vernaccia di Oristano, a local oxidative wine whose nutty and saline notes complement the warm spices of the biscuit. It is also commonly served with Mirto, a Sardinian myrtle liqueur, or a strong black coffee, which helps balance the sweetness of the sugar glaze.
