Morgh-e shekam por is a whole chicken stuffed with a richly seasoned mixture of rice, dried fruits, nuts, and aromatic herbs. Its name translates to “stuffed chicken,” and it is prepared across Iran with regional variations in spices and fillings. The dish is especially popular for festive meals and gatherings, where it is often presented as a centerpiece on the table. While stuffing poultry is common in many cuisines, the Persian version is distinct for the way it balances sweet and savory flavors. The preparation begins with cleaning and lightly seasoning the chicken inside and out. The stuffing typically includes cooked rice combined with barberries or zereshk, slivered almonds or walnuts, and golden raisins. Onions sautéed in oil, turmeric, cinnamon, and sometimes a pinch of cardamom or saffron give the filling its depth of flavor and fragrance. In some recipes, fresh herbs such as parsley and coriander are also added. The mixture is spooned into the cavity, which is then secured closed with kitchen twine or skewers to keep the filling in place during cooking. The chicken is placed in a pot or ovenproof dish and cooked slowly, either braised with a little liquid and covered or roasted until the meat is tender and the skin is golden. Depending on the method, the cooking juices are often reduced into a sauce to serve alongside. In some regions, a small amount of tomato paste or pomegranate molasses is brushed over the skin during roasting to enhance color and add a subtle tangy note. When finished, morgh-e shekam por is typically served whole, surrounded by extra rice or flatbread, and garnished with herbs or toasted nuts.
