The merveilleux is a small meringue-based cake from Belgium, composed of two crisp meringues sandwiched with whipped cream, covered with more cream, and rolled in chocolate shavings. It originated in Belgian pâtisseries in the 18th and 19th centuries, where it was prized for its lightness and simplicity, and it later spread to northern France, where pâtissiers reinterpreted it to suit local tastes.
