Merveille is a fried pastry made from a dough of flour, eggs, milk or cream, a small amount of sugar and salt, flavored with orange blossom water or Armagnac. The dough is rolled thin and cut into strips or diamond shapes that puff and become irregular during frying, resulting in beignets with a crisp exterior and a light, slightly airy interior that carries a mild sweetness and a subtle aroma from the fat used for frying. Its presence is documented in southwest France, where beignet-making developed in household kitchens and marketplaces, particularly during Carnival and festive occasions when large batches of enriched dough were prepared and fried, and the name “merveille” came to designate this specific form of beignet known locally. Preparation involves working a moderately enriched dough, resting it to relax the gluten, rolling it out thinly, cutting it into elongated strips or diamonds often with a central slit, and frying the pieces in hot fat until they puff irregularly and turn pale gold; the fried pastries are drained and dusted with sugar while still warm to finish. Variations are minimal and relate primarily to the addition of small amounts of sugar or alcohol to the dough and slight differences in the shape or size of cuts before frying, while what distinguishes merveille is the simple enrichment of the dough and the way it puffs and blisters during frying, rather than forming a dense interior. Merveille is eaten after frying, once cooled to room temperature, and is commonly served during Carnival and family gatherings, or as a sweet refreshment.
