Malakofftorte is a layered cake that originates from Austria and is particularly associated with Viennese pastry culture. It is known for its distinctive combination of sponge fingers or biscuits soaked in coffee and layered with a rich buttercream, which gives it a structure that is both light in appearance and substantial in taste. The cake carries a name that recalls the Battle of Malakoff during the Crimean War in the nineteenth century, when it became fashionable in parts of Europe to commemorate victories and places through culinary creations. Pastry chefs in Austria and France began experimenting with recipes that bore such names, and Malakofftorte is one of the few that endured as a recognizable confection beyond its era. The preparation of Malakofftorte requires careful layering rather than baking a solid sponge base. Sponge biscuits are dipped lightly in strong coffee or sometimes in a mixture that includes rum, which provides moisture and a gentle bitterness to balance the sweetness of the cream.
