Lǔ dàn miàn is a Chinese noodle dish that combines wheat noodles with soy-braised eggs, creating a meal that is both simple and flavorful. It is most closely associated with central and eastern China, where soy-braising techniques are widely used to prepare eggs, meats, and tofu. The practice of braising eggs in soy sauce, spices, and aromatics dates back centuries, rooted in methods of preserving and flavoring food.
