Krovyanka is a blood sausage from Ukraine made from fresh pork blood combined with grains such as buckwheat or barley, pork fat, onions, and simple seasonings. The dish developed within Ukrainian rural food culture as part of household pig slaughtering cycles, where blood had to be used immediately and grains played a central role in everyday diets, resulting in a sausage that functioned as both a protein and a starch and reflected the agricultural rhythm of village life. Preparation centers on cooking buckwheat or barley until tender, sautéing onions in pork fat, straining fresh blood, combining all components with salt, pepper, and sometimes garlic or marjoram, filling the mixture into casings, and cooking the sausages gently by boiling or baking until the blood coagulates fully and the casing tightens without bursting. Common variations include differences in grain choice, fat ratio, and seasoning, as well as finishing methods such as baking in the oven after boiling or pan-frying slices in fat, while the defining feature remains the dominance of grain bound by blood rather than a finely emulsified texture. Krovyanka is eaten hot or cold, sliced and fried or served as cooked links, commonly accompanied by potatoes, sauerkraut, pickled vegetables, or rye bread, and it appears in home meals and festive tables where its dense, nourishing character is balanced by acidity and simple vegetable sides rather than sauces.
