Jujeh kabab consists of pieces of chicken marinated in a mixture of yogurt, onion, saffron, lemon juice, and mild spices before being grilled over hot coals until lightly charred and succulent. The name “jujeh” means “young chicken” in Persian, referring to the tender cuts typically used, whether bone-in or boneless. This kabab is widely prepared across Iran in homes, restaurants, and picnic areas, where it is enjoyed as both an everyday meal and a celebratory dish. The preparation begins by cutting chicken, often breast or thigh, into uniform chunks to ensure even cooking. The marinade is mixed by blending yogurt with freshly squeezed lemon juice, grated onion, saffron dissolved in warm water, salt, and black pepper. This combination not only seasons the meat but also tenderizes it and imparts a distinctive golden hue. The chicken is left to marinate for several hours or overnight to develop depth of flavor. It is especially popular for picnics and outdoor meals, where portable charcoal grills are set up and the skewers are cooked fresh on site. In restaurants, jujeh kabab often shares the menu with koobideh and other kebab varieties, each reflecting different aspects of Iranian grilling practices.
