Ichlekli is a meat pie prepared in Turkmenistan, made from wheat dough filled with minced or finely chopped meat, usually lamb, combined with onions and simple seasoning, then baked or cooked until the dough is set and the filling fully done. Its development is closely connected to Turkmen pastoral and agrarian life, where wheat cultivation and sheep herding shaped everyday food practices, and dishes evolved to combine grain and meat in a single preparation that could be cooked efficiently in household ovens or clay hearths and shared among family members. Preparation begins with kneading an unleavened or lightly leavened dough, rolling it into thin rounds, placing a raw meat, tomato, bell pepper and onion filling inside, sealing the dough completely, and cooking it either in a clay oven, on a hot surface, or sometimes buried slightly in hot embers, allowing the meat juices to cook the interior while the exterior forms a firm, lightly browned shell. Ichlekli is served hot, typically cut into wedges, and eaten without sauces, as the filling is seasoned modestly to balance the bread rather than dominate it. It is eaten in homes and at communal meals in Turkmenistan, often accompanied by raw onions, simple salads, or fermented dairy products, and it pairs naturally with black tea, ayran-style yogurt drinks, or plain water, fitting into meals where the bread-and-meat combination serves as the main sustenance rather than an accompaniment.
