Grisfötter or griseføtter are the culinary cut consisting of the trotters, or feet, of the domestic pig originating as a preserved food source from Sweden and Norway, but also across the wider Scandinavian region. The practice of utilizing this specific anatomical cut stems from the necessity of total-carcass utilization within early agrarian communities, where household slaughter cycles peaked during the late autumn months and required immediate preservation methods to secure dietary proteins for the winter season. The physical structure of the trotter is composed of skin, tendons, cartilage, and bone with a minimal concentration of lean muscle tissue, requiring a dedicated multi-stage handling process to make it edible. To prepare the item, the raw feet are thoroughly singed to remove any residual hair, scraped clean, and soaked in cold water before being placed into a salt brine for several days to cure the meat and preserve its pink hue. The cured feet are subsequently rinsed and placed into a large pot filled with water, where they are brought to a gentle simmer for three to four hours alongside aromatics like whole white peppercorns, allspice berries, bay leaves, and yellow onions until the tough connective tissue is completely rendered. A structural property unique to grisfötter is the high concentration of natural collagen proteins found in the tendons and joints, which breaks down during the long boiling process into gelatin and dissolves into the cooking broth, causing the entire liquid to solidify naturally into a firm, clear aspis or jelly when cooled without the addition of industrial gelling agents.
