Gochtial is a round brioche-style bread from the Presqu’île de Rhuys in Bretagne. It has a dense but soft crumb and is made from a dough of wheat flour, fermented dough, fresh milk, butter, sugar, eggs, baker’s yeast, and salt. Its origins date back to the 19th century when bakers and households in Saint-Armel and nearby villages prepared this brioche for local gatherings and especially for the feast of Saint Vincent on January 22, when inhabitants brought their dough to the communal oven and marked their loaves for identification in the bake. To make gochtial, a dough is prepared by combining fermented wheat dough with additional flour, fresh milk, softened butter, eggs, sugar, yeast, and salt, kneading until smooth, and then allowing a long rise; once the dough has developed, it is shaped into a round loaf with a slightly bulbous form and baked until the exterior is lightly colored and the interior shows a tight, supple crumb. Variations of gochtial are limited because many bakers treat the proportions and precise process as family secrets, but differences appear in slight adjustments to sugar levels, milk content, or the firmness of the crumb, while the essential character remains that of a plain, ferment-based brioche rather than one enriched with strong sweet or savory additions. Gochtial is eaten sliced at breakfast or with afternoon refreshment, served with spreads such as salted butter, jam, or honey, and it also pairs with mild cheeses from the region, black coffee, or light tea.
