Gimblette d’Albi is a ring-shaped shortbread cookie from Albi in France. Its roots go back to the Middle Ages where the biscuit appeared in the Languedoc region around Albi and was valued for its durable form and rich flavour. Documentation from 1767 notes that gimblettes from Albi were exported to Paris at “15 sous a dozen” and described as being three times larger and far more aromatic than those sold in Paris. The recipe calls for flour, sugar, water, whole eggs, candied citron and grated lemon zest; the dough is mixed and left to rest overnight. The next day the dough is shaped into small rings of about 50 g each, plunged into boiling water until they rise to the surface, drained, then painted with egg and baked in a hot oven for approximately 15 minutes. After the initial bake the rings are coated with egg white and returned briefly to the oven so their surface becomes glossy and firm. Among the variations is a derivative called the Petit Janot (or triangle form) with different flavouring: candied citron is replaced by dry anise, the sugar reduced or replaced by a touch of salt, and the shape becomes triangular rather than ring-shaped. What sets the Gimblette d’Albi apart is the double-cooking process—first scalding in boiling water, then baking to dry—which gives it a firm texture and excellent storage capacity, well beyond what many soft biscuits achieve. Gimblettes are eaten as a snack at any time of the day but have particular association with the period from Lent to Easter; their ring shape allowed them historically to be hung on box or bay branches on Palm Sunday. They pair well with strong coffee, a lightly spiced tea, a glass of sweet or fortified wine or even brandy, and their firm texture allows dunking without falling apart.
