Gers ogaily is a fragrant saffron and cardamom sponge cake encrusted with toasted sesame seeds, originating from Kuwait and widely consumed across the Arabian Gulf states including Bahrain, Qatar, the United Arab Emirates, and Saudi Arabia. The development of the cake coincided with twentieth-century maritime trade and the introduction of European sponge-baking pans to the region, where local cooks adapted Western egg-whipped cake formulas by incorporating regional aromatics such as saffron, rose water, and green cardamom instead of vanilla extract. The name derives from the Arabic word gers , meaning disc or round loaf, referencing the circular bundt shape that resembles the agal , the black corded headband worn as part of regional male dress. Preparation begins by whipping whole eggs and sugar at high speed until pale, thick, and highly aerated, providing the primary leavening for the structure. Saffron threads soaked in warm rose water, ground cardamom, and oil or melted butter are folded into the egg foam, followed by sifted wheat flour. Before adding the batter, the inside of a fluted ring pan or circular baking mold is greased with tahini or butter and densely coated with toasted white sesame seeds. During baking, the sesame coating adheres to the outer batter layer, forming a continuous, crunchy, nutty shell that contrasts directly with the soft, yellow, porous crumb within. Gers ogaily is served at room temperature in homes, local bakeries, and cafes during morning breakfasts, afternoon social visits, and festive gatherings such as Eid. Diners slice the ring cake into individual wedges, consuming it by hand or with small dessert forks alongside cups of Arabic coffee ( gahwa ) scented with cardamom, spiced Karak milk tea, or hot black tea.
