Galette de Pérouges is a sugar-topped pie from Pérouges, a fortified medieval town in the Ain department of France. Galette de Pérouges is made from a raised dough scented with lemon and spread with a coating of butter (or occasionally cream) and sugar before baking, producing a thin, crisp-edged round with a tender interior and a caramel-sweet surface. The recipe dates back to at least 1912, when Marie-Louise Thibaut and her husband revived a local village cake recipe at their Hostellerie du Vieux Pérouges, adapting it into what became known as the galette au sucre of Pérouges, originally prepared for lean Fridays and later gaining recognition as a signature dessert of the town.
