Galette charentaise is a round, flat butter cake, made with wheat flour, eggs, butter, sugar, and candied angelica, which adds mild, sweet, herbal notes, giving it a restrained sweetness and a gently rich mouthfeel. Its origin can be traced to the mid-nineteenth century, when the Barraud family in Beurlay began producing the cake in 1848, and it gradually spread through local markets and bakeries as a recognizable specialty of Saintonge and the Charente-Maritime region before becoming a commercially distributed product. Preparation starts by mixing softened butter with sugar and eggs until smooth, then gradually incorporating flour and a leavening agent if used, folding in small pieces of candied angelica when included, pressing the dough into a round mold, scoring the surface lightly, and baking until the cake is set with a light golden color. Variations include versions flavored with candied fruits such as angelica, prunes, or blueberries, or chocolate chips; options with a slightly firmer or softer crumb depending on ingredient proportions; and minor differences in scoring patterns on the top, while the defining feature remains a tender, buttery cake without heavy icing or layered fillings. Galette charentaise is eaten at room temperature for breakfast, with afternoon tea or coffee, or as a dessert, and pairs well with coffee, black tea, cider, or lightly sweet white wines such as pineau des Charentes, which complement its rich butter and subtle aromatic accents.
