Flesk og duppe is a Norwegian dish consisting of fried or boiled salted pork belly served with a white sauce and potatoes. It comes from rural Norway, where salt-curing pork was a practical way to preserve meat through the winter, and pairing it with potatoes and a simple sauce made for a filling, balanced meal. Over time, it became a well-loved part of the country’s home cooking, especially in farming communities where pork was readily available after the autumn slaughter season.
