Entomatadas are lightly fried corn tortillas folded around a simple filling and covered with a warm, savory tomato sauce. They are usually served hot in a stack or arranged side by side, heavily topped with Mexican crema, crumbled salty white cheese, and rings or slices of raw white onion. The dish is eaten with a fork, cutting through the tomato-saturated masa and the cheese or other filling inside. Entomatadas are commonly served as a hearty breakfast or a late supper, often accompanied by refried black beans, pan-seared steak, or another simple side. Their preparation depends on a smooth, mild red sauce made from ripe Roma tomatoes, white onion, and garlic. The vegetables are simmered in water until softened, then blended into a puree. This liquid is poured into a hot skillet with a small amount of oil and cooked until it thickens into a rich tomato gravy. A sprig of fresh epazote is sometimes added to the simmering sauce, giving it an earthy, herbal note. While the sauce is cooking, fresh corn tortillas are briefly fried in hot oil for only a few seconds. This quick frying makes the tortillas pliable and creates a light barrier that allows the masa to absorb the sauce without immediately falling apart. Each softened tortilla is filled with crumbled queso fresco, shredded chicken, or another filling, then folded in half directly on the serving plate. A generous ladle of hot tomato sauce is poured over the folded tortillas just before serving. The combination of maize and tomatoes reflects ingredients central to Mesoamerican cooking, where both crops formed an important part of everyday food long before European ingredients arrived in the Americas. Over time, entomatadas became known as a mild, comforting alternative to chile-heavy enchiladas, emphasizing the sweet, acidic flavor of cooked tomatoes rather than the sharper heat of ground chiles. The filling changes easily according to what is available in the kitchen. Scrambled eggs or mashed potatoes may replace the usual cheese or poultry, creating a dense vegetarian version, while other variations use different cheeses, leftover meat, or simple household fillings. Some versions are not folded at all, but rolled into tight cylinders or stacked flat in layers, with sauce and cheese spread between each tortilla like a savory layered cake. Although the tomato sauce is usually mild and avoids intense spice, a single serrano chile may be blended with the tomatoes to add a clean background heat that balances the richness of the crema and cheese. The finished dish is soft, warm, and saturated with sauce, with the tender corn tortillas absorbing the tomato gravy while still holding enough structure to be cut and lifted from the plate. Entomatadas is traditionally a breakfast dish but can be served any time of day.
