Échaudé is a small anise-flavored biscuit from France, specifically the Aveyron region. The biscuit emerged from rural households in the Ségala area where home bakers prepared simple, portable cakes for snacks and picnics, using ingredients like flour, sugar, anise seeds, and a bit of cream or milk; over time the recipe became associated with local fairs and village gatherings. To prepare échaudés a dough is made from flour, sugar, anise seeds, eggs, cream, olive oil, yeast, and a pinch of salt; the dough is worked until smooth, rolled out, cut into small circles with a glass, each circle folded in three equal edges toward the center to give its characteristic shape, then the biscuits are briefly cooked in boiling water until they rise to the surface, drained, brushed with beaten egg yolk, placed on a greased or non-stick baking sheet, and baked at a high temperature until lightly golden. Common variations include replacing anise seeds with orange-flower water or vanilla for different aroma profiles, reducing sugar slightly for a less sweet version, or shaping the dough into triangles rather than the folded format; some regional bakers also soak the dough in dry white wine before baking to add depth of flavor. A distinctive characteristic of échaudés is the two-step cooking method—first immersion in boiling water (the “échaudage”) then baking—which gives the biscuit a firm texture, golden crust, and good shelf life suitable for packaging and transport. Échaudés are eaten at any time of day—especially for afternoon snacks, picnics, or local market treats—and they pair well with coffee, strong black tea, dessert cider, or a light sweet white wine, each complementing the crisp biscuit and its subtle anise flavor.
