Dolcemente Venzone is an exclusive refrigerated cake created by pastry chef Vincenzo Aiello at Pasticceria d’Altri Tempi in Venzone. It combines an almond-flour base with a smooth lemon cream, creating a contrast between a dense, crumbly crust and a soft, sharply citrus-flavored filling. The bakery remains the main place associated with the cake, and regional tourism sources list it among the characteristic foods of Venzone. Aiello, originally from Campania, opened Pasticceria d’Altri Tempi on December 1, 2013, in Piazza Municipio, in the historic center of the fortified alpine town. Dolcemente Venzone was developed as a specialty closely linked to the surrounding area and its culinary history. Local accounts explain the importance of almonds and other dried nuts by pointing to Venzone’s climate, which historically limited the availability of fresh fruit throughout the year. Nuts and dried fruit could be stored for long periods, making them a dependable ingredient beyond the growing season. Almond flour became the defining structural element of Aiello’s cake. Another account connects the idea behind Dolcemente Venzone with three generations of family baking: great-grandmothers associated with walnuts, grandmothers who made cakes filled with homemade preserves, and mothers who made lemon cream. The resulting cake brings these influences together through a nut-based foundation and a rich citrus filling. The base is made by grinding almonds into a fine flour and forming them into a firm, crumbly crust. The defining filling is a pale lemon cream made with lemon juice, sugar, and dairy ingredients. Accounts of the cake describe the cream as being heated twice, a method intended to improve its stability and refrigerated keeping quality. The completed cake is kept chilled, allowing the lemon layer to remain smooth and set against the firmer almond base. A refrigerated shelf life of around 15 days has also been associated with the cake, although I could not find a strong primary source confirming that exact period or the precise technical process behind it. Because Dolcemente Venzone is a proprietary specialty of Pasticceria d’Altri Tempi, there are few established variations. The bakery does, however, produce several other creations that reflect a similar interest in grains, nuts, and locally significant ingredients. Its biscotti di miglio, or millet biscuits, draw attention to millet, a grain documented as having a historical presence in the region until around the late seventeenth century. Both Dolcemente Venzone and the millet biscuits are promoted as products representing the local area. Another separate specialty is the barretta del ciclista, created with cyclists traveling along the Alpe-Adria Cycle Route in mind. Rather than being a variation of Dolcemente Venzone, it is an energy-focused confection made with dark chocolate, chopped hazelnuts, sliced almonds, and acacia honey. It is served on a wooden stick, making it easier to eat during or after physical activity. Dolcemente Venzone is kept refrigerated until serving. A thin, sharp knife helps cut clean wedges without pressing the softer lemon filling out from between the firmer layers. The cake is commonly served in triangular slices and works particularly well as an afternoon sweet. Its dense almond character and bright lemon acidity also make it a natural match for espresso, whose bitterness provides contrast to both the citrus cream and the richness of the nuts.
