Curau is a sweet, dense pudding made by boiling the extracted starchy juice of unripe corn with milk and sugar until it sets into a smooth custard. Once cooked, the pudding moves directly from the stove into shallow glass dishes or individual ceramic ramekins, and a heavy dusting of ground cinnamon always covers the entire surface before eating. The dessert arrives at the table either steaming hot, right out of the pot, in a soft, porridge-like mass, or completely chilled. Refrigerating the dishes overnight allows the naturally occurring corn starches to solidify completely, transforming the soft paste into a firm block that cuts easily with a spoon. Adjustments to the baseline recipe frequently alter the dairy, impacting the final texture. Sweetened condensed milk often replaces the standard white sugar to create a much richer, stickier consistency. A distinct adaptation swaps the cow's milk entirely for thick coconut milk, yielding a dairy-free dessert with a prominent tropical flavor profile. Another minor modification involves dropping a large spoonful of unsalted butter into the boiling pot to add a glossy sheen and a slight savory undertone. Producing the corn juice requires cutting fresh, raw kernels directly off the cob and blending them with whole milk. Passing this chunky puree through a fine mesh sieve isolates a milky, starch-heavy liquid and discards the fibrous hulls. This extracted liquid goes into a heavy-bottomed pot along with the chosen sweeteners. The mixture boils over medium heat with constant stirring to prevent the heavy starches from scorching against the hot metal. As the liquid heats, it thickens rapidly into a glossy, yellow paste. The origins of this sweet corn mixture date back to the 16th and 17th centuries, emerging from the early colonial sugar mills in the state of São Paulo. It represents a direct culinary fusion between the indigenous Tupi-Guarani diet, which relied heavily on native maize, and the introduction of cow's milk and refined cane sugar by arriving Portuguese colonizers.
