It is associated with areas around Traverse City and the surrounding fruit-growing region, where sour cherries in particular are widely harvested and processed. The item developed in the late twentieth century when local producers and food businesses began incorporating cherries into familiar foods as a way to promote regional agriculture. Among the earliest and most visible promoters was Ray Pleva, a meat processor who experimented with adding cherries to ground beef to create a moist patty that reflected local ingredients while reducing the amount of fat required in the blend. Preparation begins by combining ground beef with a measured portion of chopped or pureed cherries, often tart Montmorency cherries, since their acidity balances the richness of the meat. The mixture is seasoned simply with salt and pepper, and some cooks add small amounts of onion, Worcestershire sauce, or bread crumbs to help the patty maintain its shape. The patties are shaped gently and cooked on a grill or flat top until the meat is fully cooked and the cherries soften within the patty. Because the cherries add moisture, the burger tends to stay tender even when cooked past medium, which is useful in commercial settings where precise temperature control may vary. The cooked patties are placed on standard buns and served with toppings such as lettuce, tomato, or mild condiments that do not overpower the cherry flavor. Cherry burgers are eaten mainly in northern Michigan restaurants, farm-market grills, seasonal stands, and family kitchens, especially during the summer months when tourism and cherry harvest overlap.
