Anoushabour is a thick, sweet pudding composed of pelted wheat, dried fruits, and nuts that supposedly originated on Mount Ararat when the final remaining stores of grains, dried fruits, and nuts on the Ark were combined into a celebratory porridge as the floodwaters receded. The ancient preparation was later adopted by the Armenian Apostolic Church and established as a foundational winter holiday tradition. The sweet dish is consumed predominantly during New Year and Armenian Christmas celebrations on January 6 to symbolize prosperity, sweetness, and agricultural abundance for the coming year. The cooking process begins by soaking whole-grain skinless wheat, known regionally as korkot or dzedzadz, in cold water overnight. The softened wheat is boiled slowly over low heat for several hours until the individual kernels burst and release their natural starches, transforming the surrounding water into a thick, gelatinous base. Granulated sugar or natural honey is stirred directly into the hot porridge to establish a deep sweetness. A large quantity of chopped dried fruits, specifically dried apricots, golden raisins, and dried figs, is folded into the simmering pot. The residual heat plumps the dehydrated ingredients and infuses the grain base with concentrated fruit sugars. A small amount of rose water or orange blossom water is poured into the thick liquid to impart a fragrant floral note. The warm concoction is ladled into a large glass bowl or individual serving dishes and chilled until completely firm. The top surface is elaborately garnished prior to serving. Intricate geometric patterns are arranged across the pudding using blanched almonds, crushed walnuts, toasted pine nuts, ground cinnamon, and fresh ruby-red pomegranate arils. The finished dessert is served cold after rich holiday meals, symbolizing the endurance of ancient agricultural practices and providing a vibrant, sugary centerpiece for the festive table.
