Tamago kake gohan is a simple, savory breakfast of a raw egg cracked over a bowl of steaming-hot white rice, then vigorously mixed with soy sauce. The widespread consumption of uncooked eggs over rice gained major traction during the late 19th century. Kishida Ginkō, a prominent journalist and entrepreneur during the Meiji era, heavily championed the meal, regularly eating it and promoting the specific combination across his professional circles. Advancements in poultry farming and strict national sanitation standards eventually made consuming uncooked eggs entirely safe and commonplace nationwide. This fast meal requires only a few basic ingredients. A ceramic bowl is filled with freshly steamed short-grain white rice. The intense heat of the grains is crucial, as it slightly warms and thickens the raw egg without actually cooking it solid. A whole raw egg is cracked directly into a small divot pressed into the top of the rice mound. A splash of savory soy sauce goes over the egg. Using wooden chopsticks, the entire bowl is beaten together aggressively until the liquids emulsify with the starches, turning the white grains into a frothy, pale yellow, creamy mass. The bowl is eaten immediately after mixing, usually functioning as a rapid, high-protein morning meal before work or school. Commonly, tamago kake gohan also includes sticky fermented soybeans (natto), shredded dried seaweed, chopped green scallions, toasted sesame seeds, and salty dried bonito flakes. As for the method, egg yolk is often separated from the white. The raw egg white is vigorously whipped into the hot rice first to create an intensely fluffy base, then the intact golden yolk is gently placed in the exact center and broken just before eating.
