Space Cake

This recipe is a good place to start if you're new to making edibles as it provides detailed instructions. The cake is made as most sponge or pound cakes, except in this case the butter is infused with cannabis. The cannabutter should be made in advance, ideally, a day in advance, or the night before, so it has time to cool.

RECIPE INGREDIENTS

  • 1 cup (225g) butter
  • 7-14 g cannabis
  • 2 1/4 cup (270g) all-purpose flour
  • 2 1/2 cup (530g) packed brown sugar
  • 1 cup (240g) sour cream
  • 1 cup (240 ml) boiling water
  • 1/2 cup (115g) cannabutter
  • 3 eggs
  • 1 oz (30g) unsweetened chocolate, melted
  • 2 tsp baking soda
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt

METHOD

    Grind the cannabis, then place it on a parchment-lined baking tray. Bake in a 240°F/115°C oven for 45-60 minutes.

    Melt the butter in a double-broiler, add the cannabis, and cook for 2-3 hours, stirring every 15 minutes.

    Once 2-3 hours have passed, wait for the mixture to cool a bit, then pour it into a cheesecloth-lined strainer.

    Refrigerate, so the butter hardens and cools.

    Before use, you can melt the butter and strain it through a cheesecloth once more to rid it of all impurities.

    Set the oven to preheat to 350°F/175°C and line a 9x13-inch(23x33 cm) pan with parchment paper.

    Sift the all-purpose flour, the baking soda, and the salt into a large bowl.

    Cream the cannabutter and the brown sugar until fluffy, then add the eggs one by one, beating after each addition.

    Whisk in the melted chocolate and the vanilla extract.

    Now, first, whisk in the half of the sour cream and the flour into the cannabutter mixture, then whisk in the other half.

    Lastly, stir in the boiling water.

    Pour the batter into a pan, taking care that it is spread evenly.

    Bake in a preheated oven for 35 minutes.

    Once done, wait for the cake to cool for 10 minutes. Ice if desired, and then serve.

Lemon-flavored Space Cake

A bit of a different take on the classic space cake, this lemon-flavored space cake could be more described as a sponge cake than a space cake. The cannabutter is creamed with sugar and lemon zest, and then the eggs are added, followed by flour and baking powder. The batter is poured into a springform pan and baked. When done, you can top it with a sugar glaze. And if you're unsure about the amount of THC in your butter, or if the amount is high, we suggest you use less cannabutter than the recipe indicates and replace the rest with regular butter.

What to pay attention to

CANNABIS STRAINS

Cannabis strains can be divided into three groups: sativa, indica, and hybrid. Sativa strains have an uplifting effect, whereas indica strains relax and sedate. Hybrids, as the name implies, are somewhere in between the two.

THC AMOUNT

Most cannabis strains contain 15-20% of THC, meaning 150-200 milligrams of THC per gram of cannabis. Some strains, however, can have over 20% of TCH per gram of cannabis, and some only 10%. With simple math, we can conclude that if you use 10 grams of cannabis with 20% THC, you end up with a cake that has a total of 2000 mg of THC. If you're not used to edibles, a good dose to start is 5 milligrams of THC.

DECARBOXYLATING CANNABIS

Raw cannabis needs to be heated to get the bioavailable THC, which means it needs to go through decarboxylation. All you need to do is grind the cannabis, for example, to a consistency of dried oregano, place it on a baking sheet and then roast it for an hour in a 230°F/110°C oven.

CANNABUTTER

Cannabutter is made with three ingredients: cannabis, butter, and water. Cannabis buds are preferred, but cuttings can be used as well. The ratio of water to butter should be 50:50, although a 60:40 ratio in favor of water is often suggested. Water prevents the butter from scorching and keeps the temperature of the mixture low, ideally, at about 160°F/70°C. The temperature should never exceed 200°F/90°C. In case the temperature goes any higher or the water evaporates, add more water. The cannabis should be added once the butter melts, and the mixture simmered for 2-3 hours over low heat. The mixture should be strained through a cheesecloth, then refrigerated overnight. The following day, the cannabutter should be removed from the water, patted dry, and then refrigerated in an airtight container until ready to use.

CAUTION

When smoking a joint, the effects are almost instantaneous. In contrast, cannabis-infused edibles may take up to four hours to show an effect — one reason why many inexperienced and experienced users overdo with the consumption and experience negative side-effects. If you're new to the world of edibles, we suggest starting with a dose a low as 5 milligrams of THC, meaning you just take one bite and wait for the effects. Unlike in the case of smoking and vaping, edibles take longer to hit, the effects are considerably stronger, and the high lasts longer.

VARIATIONS

Since there is no one way to make space cake, variations abound. Different flavorings can be added to the batter, such as chocolate chips, melted chocolate, cocoa, vanilla essence, dried fruits and nuts, various spices, and herbs. The cake can be glazed, frosted, or dusted with sugar. Also, it can be made as individual portions in the form of muffins.
