Sopa de porotos

This is an authentic recipe for Sopa de Porotos, a comforting Paraguayan dish where beans, pumpkin, and cheese come together in a simple yet deeply satisfying broth. RECIPE INGREDIENTS

  • 250g (8.8 oz) beans
  • 1 onion, finely chopped
  • 1 tomato, diced
  • 1 bell pepper, diced
  • 2 cups (240g) diced pumpkin
  • green onions, to taste
  • parsley, to taste
  • 2 L (8.5 cups) boiling water
  • 100g (3.5 oz) Paraguayan cheese
  • salt and oregano, to taste

METHOD

    Soak beans for at least 3 hours.

    Sauté the onion lightly in oil. Add bell pepper and tomato. Cook for 5 minutes.

    Add pumpkin and drained beans. Pour boiling water, season with salt and oregano, and simmer until beans are tender.

    Add crumbled cheese, remove from heat immediately.

  5. 05

    Chop green onions and parsley, add before serving.
