Description

Sauce Robert is a savory brown mustard sauce that originates in the 14th century and was included in Guillaume Tirel's medieval culinary manuscript Le Viandier, before being refined and established in its modern form at the beginning of the seventeenth century by the celebrated sauce maker Robert Vinot. Marie-Antoine Carême and Georges Auguste Escoffier later codified the recipe in the classical French repertoire as a secondary sauce derived from demi-glace. The preparation begins by finely chopping white onions and sweating them in butter over low heat until the pieces become translucent. Dry white wine is poured into the pan and reduced by two-thirds to concentrate the inherent acidity. A rich brown veal stock or demi-glace is added to the reduction, and the liquid is simmered until it thickens sufficiently to coat the back of a spoon. The pan is removed entirely from the heat source before a generous amount of Dijon mustard is stirred into the hot liquid. Boiling the sauce after the mustard is incorporated is strictly avoided, as high temperatures make the mustard bitter and break down its smooth texture. A pinch of sugar is dissolved in the final mixture to balance the wine's sharp acidity and the mustard's pungency. This dark, sharp gravy is frequently poured over grilled or roasted cuts of pork, such as pan-seared pork chops and roasted tenderloins. The acidic profile of the mustard and wine cuts directly through the meat's heavy fat. Although the rich meat pairings make the sauce a common fixture in autumnal and winter meals, the sauce accompanies veal and grilled poultry year-round. The finished sauce is a foundational element of traditional French gastronomy, demonstrating the classical technique of balancing deep, roasted-meat reductions with sharp, acidic condiments.
