Sanddorntorte is a layered cream cake from northern Germany, especially associated with coastal regions along the Baltic Sea, where sea buckthorn is cultivated and processed into preserves. The cake is made from sponge cake layers, whipped cream or cream-based filling, sugar, and sea buckthorn juice, puree, or curd that gives the cake its bright color and fresh taste. Sanddorntorte developed as sea buckthorn became more widely used in northern German cooking during the twentieth century, when the hardy coastal plant was recognized for its flavor and suitability for preserves, juices, and desserts, and bakeries began incorporating it into cakes suited for cafés and holiday tables. Preparation follows a layered cake method in which sponge cake rounds are baked and cooled, sea buckthorn juice or puree is cooked briefly with sugar and sometimes thickened to form a stable fruit component, whipped cream is prepared separately, and the elements are combined by spreading the sea buckthorn mixture and cream between cake layers and over the surface, with the cake chilled so the filling sets cleanly. Common variations include changes in the proportion of fruit to cream, the use of quark or yogurt to lighten the filling, additional layers of sponge or biscuit base, and decorative toppings such as whipped cream rosettes or fruit glaze, while the defining feature remains the contrast between creamy sweetness and sharp sea buckthorn flavor. The cake is eaten cold and is served in cafés, bakeries, and homes in coastal northern Germany, most often in the afternoon with coffee or tea, and it is also presented as a dessert at celebrations where a refreshing finish is preferred.
