ABOUT THE DISH
Sabzi or sabji is the name referring to a wide variety of Indian mixed vegetable dishes. Seasoned vegetables are fried and traditionally served in two ways, informally named dry and wet . The dry method excludes the addition of any liquid, while the wet variety usually includes tomatoes and resembles thick vegetable curries. Vegetables used in sabzi often include potatoes, carrots, peas, green beans, cauliflower, and pumpkin. Traditional Indian spices such as cumin seeds, turmeric, chili powder, mustard seeds, fenugreek, and the authentic spice asafetida are usually combined to give the dish an intense, aromatic flavor. Sabzi dishes are often served alongside Indian breads such as naan and chapati, but they can also be accompanied by rice or served on the side with meat dishes.
