- 30 g fresh yeast
- 4 egg yolks
- 60 g powdered sugar

Inspired by an old recipe dating from 1904, this pączki preparation method was adapted from przepisytradycyne.pl. Its main characteristic is that pączki are filled after being fried by using a kitchen syringe. This recipe will yield around 12 pieces.

METHOD
Heat 200 ml of milk and combine it with 200 g of sifted flour. Mix well until all the lumps disappear, then set aside and allow to cool.
In a small bowl, dissolve fresh yeast in 50 ml of warm milk and let it rise for 10 minutes. Now, add this mixture to the one from the previous step, stir well, and leave to rise for 20 minutes.
In a separate bowl, mix egg yolks with powdered sugar until light and fluffy.
In a small saucepan, melt the butter and allow it to cool.
In a large bowl, combine the yeast mixture with egg yolk mixture, melted butter and the remaining 300 g of flour. Knead thoroughly until the dough stops sticking to your hands. Cover the bowl with a clean kitchen cloth and let the dough rise for 30 minutes. To make rising faster, you can place the bowl with the dough into a larger bowl filled with hot water.
Transfer the dough to a lightly floured working surface. Divide the dough into portions – each should weigh approximately 80 g – and form them into balls. Cover with a kitchen cloth and let them rise for another 30 minutes.
Heat oil in a large, wide pot. Fry pączki on both sides for several minutes, until golden brown. Do it in small batches, making sure pączki do not touch during frying.
Drain pączki on a kitchen towel and let them cool slightly before you fill them with your favorite jam using a kitchen syringe.
OTHER REALIZATIONS

This recipe was adapted from Polish Heritage Cookery cookbook, accessed through Google Books. You can choose between preparing the small or the large pączki and frying them in lard, oil, or a combination of the two.
A filling made with rosehip preserve and ground almonds is the main attribute of this recipe, adapted from Old Polish Tradition cookbook and accessed via foodtimeline.org. The dough can additionally be flavored with grated lemon rind and a small glass of spirit, which is said to prevent pączki from soaking up too much oil.
USEFUL NOTES
Regular soft, white wheat flour is the most common choice for pączki. Sift it to make it airier and to remove any lumps. Some extra flour might come in handy to dust the dough before leaving it to rise.
To make pączki, you can use either dry yeast or fresh, compressed yeast which comes in the shape of cubes. The conventional approach is to mix yeast with some lukewarm milk, sugar, and flour, and leaving it to rise in a warm place for about 10 minutes. When the yeast becomes spongy and bubbly, it is ready to be mixed with flour and other ingredients.
