Matelote is a popular French fish stew made with freshwater fish such as eel, salmon, and carp, a fish stock broth, and the best red or white wines. The name matelote means sailor in French, and the stew is also known as fisherman's Coq au vin . Although not as popular as bouillabaisse , a similar dish using saltwater fish, it has several regional variations, such as matelote Normande , which uses hard cider instead of wine. It is recommended to serve matelote with some boiled potatoes, a salad, and a crusty baguette on the side.
