About the dish

Marzarin is a small almond tart from Sweden, consisting of a shortcrust pastry shell filled with a smooth almond paste mixture and topped with a thin layer of white icing. It belongs to the classic range of Swedish café and bakery treats, known for being both elegant and satisfying in a small portion. Its compact size and rich almond flavour have made it one of the most recognisable pastries in the country. The tart has been baked in Sweden for well over a century, inspired by European almond-based confections that spread north from France and Italy. Swedish bakers adapted these ideas into a pastry suited to local tastes, favouring a soft, sweet almond filling encased in a buttery crust, often glazed for a polished finish. Preparation involves pressing shortcrust pastry into small tart moulds, filling them with a mixture of ground almonds, sugar, butter, and eggs, and baking until golden and firm. Once cooled, the tops are usually covered with a smooth icing made from icing sugar and water or lemon juice, creating a glossy surface that contrasts with the nutty interior. The result is a pastry that is both delicate and rich, with a balance of textures between the crisp shell, moist almond filling, and soft icing. Variations exist where the icing is flavoured with lemon or left off altogether, allowing the almond filling to stand out. In Sweden, marzarin is most often eaten during fika, the coffee break that is central to social and work life, where it pairs naturally with a cup of strong coffee or tea. It is found in bakeries, supermarkets, and coffee shops throughout the country, and while it has not achieved the same international recognition as some other Scandinavian pastries, it remains a staple of Swedish baking culture.
