Doukounou is the name for a popular Haitian cornmeal pudding that is neither sweet nor savory in flavor, which is why it is commonly eaten with a sweet or savory sauce on the side. For the sweet version, the combination of cornmeal, coconut milk, sugar, cinnamon, raisins, vanilla extract, beaten eggs, and nutmeg is traditionally wrapped in fresh banana leaves, then steamed. Before unwrapping, the pudding should be left to cool down, and it is then served at room temperature with vanilla-cinnamon sauce.
