Description

Arañitas are crisp fritters made from coarsely grated green plantains. Their name means “little spiders,” a reference to the thin, jagged strands that stick out from each cluster after frying. Plantains reached the Caribbean in the early 16th century, with the friar Tomás de Berlanga often credited with bringing them from the Canary Islands in 1516. Over time, frying techniques with strong African roots shaped many local uses for the starchy fruit. Grating the plantain instead of boiling or pounding it creates more exposed surface area, giving arañitas their especially crisp texture. The green peel is removed with a knife, and the firm flesh is shredded on the coarse side of a grater. The strands are seasoned with crushed garlic, salt, and black pepper. No flour, egg, or added liquid is needed, since the starch in the raw plantain helps hold everything together. Small portions are pressed lightly into loose clusters, leaving the ends uneven and spiky. They are fried in hot oil for three to four minutes, until deep golden and crisp on the outside. The center stays denser and slightly chewy, creating a clear contrast with the brittle outer strands. Once fried, the fritters are drained on a rack or absorbent paper and served while still hot. Some versions combine green and ripe plantains. The ripe fruit adds sweetness, a softer center, and more caramelization around the edges. Other variations mix pork cracklings, crab meat, or another savory filling into the shredded plantain before frying. Arañitas are commonly served as an appetizer or side, usually with mayo-ketchup. This pink dipping sauce combines mayonnaise and ketchup, often with garlic, lime juice, or hot sauce. The crisp strands break apart easily, while the thicker center holds enough structure for dipping. Their appeal comes from that contrast: crunchy edges, a firm interior, strong garlic, and the mild, earthy flavor of green plantain.
